ARROZ CON POLLO 2 boneless, skinless chicken breast halves 1/4 cup cooking oil 2/3 cup raw white rice 1 small sweet onion, diced 1 small bell pepper (any color), diced 1 clove garlic, minced 1 16 oz can chicken or vegetable broth, simmering 1 16 oz can diced tomatoes, undrained 1/2 tsp salt 1/4 tsp black pepper 1/4 tsp celery seed 1/2 tsp ground cumin (comino) Brown chicken breasts in oil over medium heat. Remove chicken and brown rice, onion, bell pepper and garlic in same pan. Cut chicken into bite sized pieces and return to pan. Cook and stir until rice has changed color. Add hot broth, tomatoes and spices. Stir, cover and simmer for 30 minutes.
