BAKED EGGS WITH PEPPERS - The Flavor of the South (1977) 2 Tbls butter or margarine 1 green pepper, coarsely chopped 1 small onion, chopped 6 eggs 1/4 cup flour 1 tsp salt 1/2 tsp baking powder 1/8 tsp pepper Preheat oven to 350F. Melt butter in 8- or 9-inch ovenproof skillet. Add green pepper and onion and cook over moderate heat until tender but not browned. Beat eggs, add flour, salt, baking powder and pepper and beat hard until flour is well blended. Pour over pepper/onion mixture. Bake 15 minutes or until top is puffed and lightly brown. Cut into wedges and serve. Makes 4 servings.
