TEXAS HASH - The Flavor of the South (1977) 2 large onions, coarsely chopped 2 green peppers, coarsely chopped 3 Tbls oil 1 lb lean ground beef 2 large cloves garlic, minced 1 Tbls chili powder, or more 1 tsp salt 1/2 tsp cumin 1/4 tsp pepper 1 16 oz can tomatoes 1 cup water 3/4 cup rice Cook onions and peppers in oil until tender, stirring occasionally. Add beef, garlic, chili powder, salt, cumin and pepper. Cook, stirring to keep beef crumbly until browned. Add tomatoes and water. Bring to a boil, add rice, cover, and bring again to a boil. Stir once, turn to low heat, cover and simmer until liquid is absorbed and rice is tender, about 1 hour. Makes 4 to 6 servings
